Caesar Chicken Pita Sandwiches

Ingredients (homes):

  • 1 lb. 2 oz. cooked, sliced/diced chicken
  • 1/2 cup caesar salad dressing
  • 1 1/2 cups diced fresh tomatoes (about 11 oz.)
  • 3 cups shredded iceberg lettuce (about 7 oz.)
  • 12 halves (6 whole) whole wheat pita bread, at least 28 g each

Ingredients (centers):

  • 4 lb. 14 oz. cooked, sliced/diced chicken
  • 2 cups + 2 Tablespoons caesar salad dressing
  • 6 1/2 cups diced fresh tomatoes (about 3 lbs.)
  • 13 cups shredded iceberg lettuce (about 1 lb. 13 oz.)
  • 52 halves (26 whole) whole wheat pita bread, at least 28 g each

Directions:

  1. Toss chicken in dressing.
  2. Open pita pockets.
  3. Stuff each pita pocket with 1 1/2 oz. chicken, 1/4 cup lettuce, and 2 Tbsps. tomato.

Serve:

1 pita half = 1 1/2 oz. meat, 1 oz. eq. whole grain, and 1/4 cup vegetable.
For ages 6+, serve 1 whole pita (2 halves) for a full 2 oz. serving of meat and 1/2 cup serving of vegetable at lunch/dinner.
Keep in mind 1 cup lettuce counts as 1/2 cup vegetable for the CACFP.
