Ingredients (homes):
- 3 cup Rice, cooked, enriched
- 1 (16 oz.) can Black Beans, canned, drained
- 1 (15.25 oz.) can Corn canned, drained
- 1 (16 oz.) jar Salsa
- 1 1/2 cup Sour Cream
- 4 cup (1 pound) Cheese, natural, shredded, Mexican blend
Ingredients (centers):
- 7 1/2 cup Rice, cooked, enriched
- 2 (16 oz.) can Black Beans, canned, drained
- 2 (15.25 oz.) can Corn canned, drained
- 1 (48 oz.) jug Salsa
- 3 3/4 cup Sour Cream
- 2 1/2 pound Cheese, natural, shredded, Mexican blend
Directions:
- Set aside half of the cheese.
- Mix all of the other ingredients in pan(s).
- Top with reserved cheese.
- Bake at 350F until a food thermometer reaches 165F, about 40 minutes for a 9x13" pan.
Serve:
1 portion = 1 1/2 oz. meat/alt., 1/4 cup rice and 1/4 cup vegetable
