Chicken Slow Cooker Casserole

Ingredients (homes):
- 1 (10.75 oz.) can Cream of Chicken Soup, condensed
- 1/2 cup Water
- 1/2 cup Ranch Dressing, light
- 1 pound Mixed Vegetables, frozen
- 6 oz. Seasoned Stuffing Mix
- 1 1/2 pound Boneless, Skinless Chicken/Turkey
Ingredients (centers):
- 2 (10.75 oz.) can Cream of Chicken Soup, condensed
- 1 cup Water
- 1 cup Ranch Dressing, light
- 2 pound Mixed Vegetables, frozen
- 12 oz. Seasoned Stuffing Mix
- 3 pound Boneless, Skinless Chicken/Turkey
Directions:
- Mix soup, water and ranch dressing.
- Layer vegetables, and dry stuffing in slow cooker(s). Top with chicken & ranch mixture. TIP: try whole wheat stuffing mix, which is often available in the fall (before Thanksgiving).
- Cover. Cook on high for 4 hours or until the center of the chicken reaches 165F.
Serve:
1 portion = 1 1/2 oz. meat, 1/2 oz. eq. grain, and 1/4 cup vegetable
