Chicken Slow Cooker Casserole

Ingredients (homes):

  • 1 (10.75 oz.) can Cream of Chicken Soup, condensed
  • 1/2 cup Water
  • 1/2 cup Ranch Dressing, light
  • 1 pound Mixed Vegetables, frozen
  • 6 oz. Seasoned Stuffing Mix
  • 1 1/2 pound Boneless, Skinless Chicken/Turkey

Ingredients (centers):

  • 2 (10.75 oz.) can Cream of Chicken Soup, condensed
  • 1 cup Water
  • 1 cup Ranch Dressing, light
  • 2 pound Mixed Vegetables, frozen
  • 12 oz. Seasoned Stuffing Mix
  • 3 pound Boneless, Skinless Chicken/Turkey

Directions:

  1. Mix soup, water and ranch dressing.
  2. Layer vegetables, and dry stuffing in slow cooker(s). Top with chicken & ranch mixture. TIP: try whole wheat stuffing mix, which is often available in the fall (before Thanksgiving).
  3. Cover. Cook on high for 4 hours or until the center of the chicken reaches 165F.

Serve:

1 portion = 1 1/2 oz. meat, 1/2 oz. eq. grain, and 1/4 cup vegetable
