Ingredients (homes):
- 2 cup Whole Wheat Flour
- 2 cup Cornmeal, enriched
- 1 TBSP. + 1 tsp. Baking Powder
- 1 1/2 tsp. Salt
- 1/2 cup Honey** or Sugar
- 1/4 cup Oil
- 2 cup Milk, skim
- 2 Eggs, large
Ingredients (centers):
- 4 cup Whole Wheat Flour
- 4 cup Cornmeal, enriched
- 2 TBSP. + 2 tsp. Baking Powder
- 1 TBSP. Salt
- 1 cup Honey** or Sugar
- 1/2 cup Oil
- 4 cup Milk, skim
- 4 Eggs, large
Directions:
- Preheat oven to 375 degrees.
- Combine flour, corn meal, baking powder, and salt.
- Add the honey, oil, milk, and eggs.
- Mix just enough to moisten the batter.
- Pour the batter into baking pan(s) coated with nonstick spray.
- Bake at 375 degrees for 20-35 minutes or until golden brown.
Serve:
1 Portion = 1 oz. eq. whole grain
** Substitute sugar instead of honey for children under 1 year of age.
