Cowboy Caviar (Southwest Bean Salad)

Ingredients (homes):
- 1 (15 oz.) can Black Beans, drained
- 1 (15.25 oz.) can Pinto Beans, drained
- 1 (10 oz.) can Diced Tomatoes with Mild Green Chiles
- 1/2 cup each Green Pepper & Onion, frozen, chopped
- 1/4 cup Italian Dressing
- 1 teaspoon Garlic Salt
Ingredients (centers):
- 1 (110 oz.) can Black Beans, drained
- 1 (108 oz.) can Pinto Beans, drained
- 2 (28 oz.) cans Diced Tomatoes with Mild Green Chiles
- 1 pound each Green Pepper & Onion, frozen, chopped
- 1 1/2 cups Italian Dressing
- 1 Tablespoon + 2 teaspoons Garlic Salt
Directions:
- Mix all ingredients together.
- Serve with whole grain tortilla chips for dipping.
Serve:
1/2 cup counts as 1 oz eq meat alternate OR
1/2 cup counts as 1/2 cup vegetable.
Tip: Count this recipe as a VEGETABLE for LUNCH/DINNER or a MEAT ALT. at SNACK to best meet serving sizes. (Beans CANNOT count as both veggie and meat alt. at the same meal or snack.)
