Enchilada Casserole - Vegetarian (or Vegan)

9 x 13 x 2" pan
24 portions (for ages 1-2) OR

Ingredients (homes):

  • 2 (10 oz.) cans mild enchilada sauce
  • 12 tortillas, at least 28 g each
  • 1 lb. 8 oz. shredded natural cheese, Mexican blend
  • *For vegan version only: credit beans instead of cheese and, if desired, use non-creditable plant based cheese
  • *Vegan only: 6 cups refried beans

Ingredients (centers):

  • 2 (28 oz) cans mild enchilada sauce
  • 28 tortillas, at least 28 g each
  • 3 pounds 6 ounces shredded natural cheese, Mexican blend
  • *For vegan version only: credit beans instead of cheese and, if desired, use non-creditable plant based cheese
  • *Vegan only: 1 (115 oz.) can + 1 (16 oz.) can refried beans (about 3 quarts + 1 1/2 cups)

Directions:

  1. Spread half of the sauce in the bottom of the pan(s).
  2. Layer half of the tortillas on top.
  3. Add cheese. (*Vegan version: add beans and, if desired, non-creditable plant-based cheese.)
  4. Pour remaining sauce on top.
  5. Bake at 375°F for 25 min.
  6. For ages 1-2, cut each 9x13" pan into 24 portions (4 x 6) and cut each 12 x 20" pan into 56 portions (7 x 8).
  7. For ages 3-5, cut each 9x13" pan into 16 portions (4 x 4) cut each 12 x 20" pan into 36 portions (6 x 6) for the large recipe.
  8. For ages 6+, cut each 9x13" pan into 12 portions (4 x 3) cut each 12 x 20" pan into 27 portions (3 x 9) for the large recipe.

Serve:

1 portion for ages 1-2 counts as 1 oz. eq. meat alternate + 1/2 oz. eq. grain.
1 portion for ages 3-5 counts as 1.5 oz. eq. meat alternate + 3/4 oz. eq. grain.
1 portion for ages 6+ counts as 2 oz. eq. meat alternate + 1 oz. eq. grain.
