Flexitarian Taco Filling

Ingredients (homes):

  • 2 pounds raw ground beef or turkey
  • OR 4 (16 oz.) cans pinto beans, rinsed, drained
  • OR 3 lbs. 1 oz. tofu, firm, drained, pressed, cubed and crumbled
  • If using meat: 3/4 cup water
  • If using beans/tofu: 1/4 cup oil
  • 2 (1 oz.) packets OR 1/2 cup taco seasoning

Ingredients (centers):

  • 10 lbs. 12 oz. raw ground beef or turkey
  • OR 2 (108 oz.) cans pinto beans, rinsed, drained
  • OR 16 lbs. 8 oz. tofu, firm, drained, pressed, cubed and crumbled
  • If using meat: 4 cups water
  • If using beans/tofu: 1 1/3 cups oil
  • 10 ounces OR 2 3/4 cups taco seasoning

Directions:

  1. Meat version: Brown meat. Drain. Mix in water and seasoning. Simmer until thickened, 3-4 minutes for a 10 inch skillet.
  2. Bean/tofu version: Toss tofu and/or beans in oil and seasoning. Place on sheet pans. Bake at 400°F for 15 minutes or until heated through.

Serve:

2 oz. cooked meat OR 1/2 cup beans OR tofu = 2 oz. eq. meat alternate.
