French Toast Casserole (Crock Pot)

Ingredients (homes):

  • 14 oz (about 15 slices) bread, use whole wheat for WG
  • 7 large eggs (OR 1 1/3 cups liquid whole eggs)
  • 16 fl. oz. (OR 2 cups) milk
  • 2 teaspoons cinnamon
  • 1/4 cup melted butter/margarine
  • 1/2 cup packed brown sugar
  • 1 teaspoon vanilla

Ingredients (centers):

  • 3 lbs. 8 oz. bread, use whole wheat for WG
  • 28 large eggs (OR 5 2/3 cups liquid whole eggs)
  • 64 fl. oz. (OR 8 cups) milk
  • 2 tablespoons + 2 teaspoons cinnamon
  • 1 cup melted butter/margarine
  • 2 cups packed brown sugar
  • 1 Tablespoon + 1 teaspoon vanilla

Directions:

  1. Coat the crock pot/roaster with nonstick spray. Place bread in the bottom.
  2. Beat together all remaining ingredients. Gently pour over the bread, coating all slices.
  3. Cook until set and browned (a food thermometer must read at least 165 degrees F), about 2 hours on high or 5 hours on low for a 5 quart crock pot.
  4. Portion with a 1/2 cup (#8) scoop for ages 6+. Use a 1/4 cup (#16) scoop for ages 1-5.
  5. Serving suggestions: Top with a serving of fruit, (1/4 cup for 1-2 year olds or 1/2 cup for ages 3 and older at breakfast) such as strawberries, bananas, apple slices, or cherries.

Serve:

1/2 cup (#8 scoop) to each child ages 6+ at breakfast or snack.
1/4 cup (#16 scoop) to each child ages 1-5 at breakfast or snack.
