Fruit Fiesta Bowl Snack (Mixed Fruit w/ Cinnamon Cottage Cheese)

Ingredients (homes):
- 2 Tablespoons Brown Sugar
- 1/4 teaspoon Cinnamon
- 12 ounces Cottage Cheese (1 1/2 cups)
- 1 1/2 cups Mandarin Oranges, canned, drained (about 16 oz.)
- 1 1/2 cups Pineapple, canned, crushed, drained (about 15 oz.)
- For ages 6+: ADD 1 1/2 cups Fruit Cocktail, drained (about 19 oz.)
- OPTIONAL: 1/4 cup + 2 Tbsps. shredded coconut

- 3/4 cup Brown Sugar
- 1 teaspoon Cinnamon
- 3 pounds Cottage Cheese (6 cups)
- 6 cups Mandarin Oranges, canned, drained (about 5 lb. 5 oz.)
- 6 cups Pineapple, canned, crushed, drained (about 4 lb. 6 oz.)
- For ages 6+: ADD 6 cups Fruit Cocktail, drained (about 4 lb. 5 oz.)
- OPTIONAL: 1 1/2 cups shredded coconut
Directions:
- Mix brown sugar and cinnamon with cottage cheese.
- In each bowl, place 1/4 cup oranges, 1/4 cup pineapple, (AND 1/4 cup cocktail for ages 6+).
- Top with 1/4 cup cottage cheese and, if desired, 1 Tablespoon coconut.
Serve:
1 bowl counts as 1 oz. eq. meat alternate and 1/2 cup* fruit for ages 1-5 at snack.
*OR 3/4 cup fruit for ages 6+ at snack.
