Italian Sausage & Peppers Over Rice (WG)

Ingredients (homes):
- 2 1/2 pound Sweet Italian Turkey Sausage
- 2 pound Pepper & Onion Strips, frozen
- 6 cup (for 1/2 cup portion) Brown Rice, cooked
Ingredients (centers):
- 5 pound Sweet Italian Turkey Sausage
- 4 pound Pepper & Onion Strips, frozen
- 12 cup (for 1/2 cup portion) Brown Rice, cooked
Directions:
- Preheat oven to 375 degrees. Place sausage pieces in center of the pan(s). Arrange vegetables on each end of the pan(s).
- Bake 35 minutes or until a food thermometer reads 165 degrees.
- Serve meat (2 oz.) and veggies (1/4 cup) over rice (1/2 cup).
Serve:
1 portion = 2 oz. meat, 1 oz. eq. whole grain serving and/or 1/4 cup vegetable.
