"It's In The Bag" Roast with Root Vegetables

Ingredients (homes):
- 1 (1 pound) bag baby potatoes, cut in half
- 1 (1 pound) bag baby carrots
- 1 (1 pound) bag diced fresh sweet potatoes
- 3 pounds trimmed boneless roast (pork or beef)
- 1 packet EACH (0.7-1 oz. weight) ranch dressing mix, Italian dressing mix, and brown gravy mix
- 2 cups water
Ingredients (centers):
- 4 pounds baby potatoes, cut in half
- 4 pounds baby carrots
- 4 pounds diced fresh sweet potatoes
- 12 pounds trimmed boneless roast (pork or beef)
- 4 packets EACH (0.7-1 oz. weight) ranch dressing mix, Italian dressing mix, and brown gravy mix
- 2 quarts water
Directions:
- Spray cooker/roaster with nonstick spray.
- Rinse vegetables and place on the bottom. Top with roast.
- Sprinkle seasonings on top. Pour water over seasonings.
- Cook until a food thermometer placed inside the roast reads 145°F, about 7-8 hours on low or 4-5 hours on high for a 5-quart slow cooker.
Serve:
1 portion = 2 ounces meat + 1/2 cup vegetable
