Ingredients (homes):
- 2 cup Whole Grain Macaroni
- 2 cup Cottage Cheese
- 2 cup Sour Cream, light
- 4 cup Cheddar Cheese, shredded
- 4 large Eggs, beaten
Ingredients (centers):
- 4 cup Whole Grain Macaroni
- 4 cup Cottage Cheese
- 4 cup Sour Cream, light
- 8 cup Cheddar Cheese, shredded
- 8 large Eggs, beaten
Directions:
- Boil macaroni according to directions. Drain.
- For a smooth texture, puree cottage cheese.
- Mix all ingredients together. Pour into pan(s) coated with nonstick spray.
- Bake at 325 degrees until set and browned, about 50-60 minutes for a 9x13" pan.
Serve:
1 portion = 2 oz. meat alt. & 1/2 oz. eq. bread/grain
