Ingredients (homes):

  • 2 cup Whole Grain Macaroni
  • 2 cup Cottage Cheese
  • 2 cup Sour Cream, light
  • 4 cup Cheddar Cheese, shredded
  • 4 large Eggs, beaten

Ingredients (centers):

  • 4 cup Whole Grain Macaroni
  • 4 cup Cottage Cheese
  • 4 cup Sour Cream, light
  • 8 cup Cheddar Cheese, shredded
  • 8 large Eggs, beaten

Directions:

  1. Boil macaroni according to directions. Drain.
  2. For a smooth texture, puree cottage cheese.
  3. Mix all ingredients together. Pour into pan(s) coated with nonstick spray.
  4. Bake at 325 degrees until set and browned, about 50-60 minutes for a 9x13" pan.

Serve:

1 portion = 2 oz. meat alt. & 1/2 oz. eq. bread/grain
