Ingredients (homes):

  • 4 cup Spinach, fresh
  • 1 can Mandarin Oranges, canned, drained (15 oz. can)
  • 2 TBSP. Almonds, slivered (omit for kids under age 2)
  • 1/4 cup Dried Cranberries (omit for kids under age 2)
  • 2 TBSP. Feta Cheese
  • 2 TBSP. Sweet & Sour Salad Dressing

Ingredients (centers):

  • 12 cup Spinach, fresh
  • 3 can Mandarin Oranges, canned, drained (15 oz. can)
  • 1/4 cup + 2 TBSP. Almonds, slivered (omit for kids under age 2)
  • 3/4 cup Dried Cranberries (omit for kids under age 2)
  • 1/4 cup + 2 TBSP. Feta Cheese
  • 1/4 cup + 2 TBSP. Sweet & Sour Salad Dressing

Directions:

  1. Wash spinach.
  2. Drain juice from mandarin oranges.
  3. Toss all ingredients in a large salad bow.

Serve:

1 Portion = 1/4 cup vegetable.
