Ingredients (homes):

  • 2 1/2 pound Shrimp, medium, frozen, peeled, deveined, thawed
  • 3 pound Pineapple, fresh, peeled, cored, cut 1/2 inch thick
  • 1 tsp. Lemon Pepper Seasoning
  • 1/4 cup + 2 TBSP. Poppy Seed Dressing
  • 2 TBSP. Pineapple Juice or Orange Juice

Ingredients (centers):

  • 5 pound Shrimp, medium, frozen, peeled, deveined, thawed
  • 6 pound Pineapple, fresh, peeled, cored, cut 1/2 inch thick
  • 2 tsp. Lemon Pepper Seasoning
  • 3/4 cup Poppy Seed Dressing
  • 1/4 cup Pineapple Juice or Orange Juice

Directions:

  1. Preheat oven broiler.
  2. Rinse thawed shrimp; pat dry with paper towels.
  3. Place shrimp and pineapple slices on baking sheet coated with nonstick spray.
  4. Sprinkle with lemon pepper seasoning.
  5. Broil for 4 minutes.
  6. Mix poppy seed dressing with pineapple or orange juice. Set aside.
  7. Remove pan from broiler. Brush the poppy seed and juice mixture over the shrimp. Turn the shrimp over and brush the other side.
  8. Broil for 4 minutes longer or until shrimp are opaque and pineapple is heated through.

Serve:

1 portion = 1 1/2 oz. meat/meat alt. and 1/4 cup fruit.
