Ingredients (homes):
- 2 1/2 pound Shrimp, medium, frozen, peeled, deveined, thawed
- 3 pound Pineapple, fresh, peeled, cored, cut 1/2 inch thick
- 1 tsp. Lemon Pepper Seasoning
- 1/4 cup + 2 TBSP. Poppy Seed Dressing
- 2 TBSP. Pineapple Juice or Orange Juice

- 5 pound Shrimp, medium, frozen, peeled, deveined, thawed
- 6 pound Pineapple, fresh, peeled, cored, cut 1/2 inch thick
- 2 tsp. Lemon Pepper Seasoning
- 3/4 cup Poppy Seed Dressing
- 1/4 cup Pineapple Juice or Orange Juice
Directions:
- Preheat oven broiler.
- Rinse thawed shrimp; pat dry with paper towels.
- Place shrimp and pineapple slices on baking sheet coated with nonstick spray.
- Sprinkle with lemon pepper seasoning.
- Broil for 4 minutes.
- Mix poppy seed dressing with pineapple or orange juice. Set aside.
- Remove pan from broiler. Brush the poppy seed and juice mixture over the shrimp. Turn the shrimp over and brush the other side.
- Broil for 4 minutes longer or until shrimp are opaque and pineapple is heated through.
Serve:
1 portion = 1 1/2 oz. meat/meat alt. and 1/4 cup fruit.
