Pizza Quesadillas (WG) (Vegetarian)

Ingredients (homes):
- 12 Tortillas, whole wheat, 45 g each
- 1 cup Spaghetti Sauce
- 24 ounces Mozzarella cheese
- pizza toppings, to taste

- 16 Tortillas, whole wheat, 70 g each
- 2 cups Spaghetti Sauce
- 3 pounds Mozzarella cheese
- pizza toppings, to taste
Directions:
- Place tortillas around the pan edges. Half of each tortilla will hang over the edge. For a 13 x 18" pan, hang 2 tortillas halfway over each edge of the pan. For a 18 x 26" pan, place 2 tortillas over each short edge and 3 on each long side.
- Fill center with tortillas (2 for a 13 x 18" pan, 3 for a 18 x 26" sheet pan)
- Spread sauce in the bottom of the pan(s). Top with cheese (and pizza toppings).
- Place remaining tortillas in the center (2 for 13 x 18", 3 for 18 x 26"). Fold hanging tortillas over top.
- Bake at 425 degrees until browned, about 20 minutes for 13 x 18" pan.
Serve:
1 square counts as 2 oz. eq. meat alternate and 1 oz. eq. whole grain.
Serve 1/2 square to ages 1-2 to count as 1 oz. eq. meat alternate and 1/2 oz. eq. whole grain.
Alternate cutting directions: Cut a 13 x 18" sheet pan into 16 squares (OR cut an 18 x 26" sheet pan into 32 squares) to count as 1 1/2 oz. eq. meat alt. + 1/2 oz. eq. grain for ages 3-5 at lunch/dinner.
