Ingredients (homes):

  • 2 cup Whole Wheat Flour
  • 1 TBSP. + 1 1/2 tsp. Baking Powder
  • 1 tsp. Pumpkin Pie Spice
  • 1/2 tsp. Cinnamon
  • 2 Egg, large
  • 2 cup Milk
  • 1/2 cup Pumpkin, canned
  • 1/4 cup Honey** or Sugar

Ingredients (centers):

  • 4 cup Whole Wheat Flour
  • 3 TBSP. Baking Powder
  • 2 tsp. Pumpkin Pie Spice
  • 1 tsp. Cinnamon
  • 4 Egg, large
  • 4 cup Milk
  • 1 cup Pumpkin, canned
  • 1/2 cup Honey** or Sugar

Directions:

  1. Combine all dry ingredients in a bowl.
  2. Stir in egg and milk.
  3. Stir in pumpkin and honey until fully combined.
  4. Pour batter onto a pan or griddle sprayed with cooking spray.
  5. Cook on low-medium heat until sides start to bubble (~3 minutes).
  6. Flip pancakes and cook for an additional 1-2 minutes.

Serve:

1 pancake = 1/2 oz. eq. grain
**Substitute sugar instead of honey for children under 1 year of age.
