Ingredients (homes):
- 2 cup Whole Wheat Flour
- 1 TBSP. + 1 1/2 tsp. Baking Powder
- 1 tsp. Pumpkin Pie Spice
- 1/2 tsp. Cinnamon
- 2 Egg, large
- 2 cup Milk
- 1/2 cup Pumpkin, canned
- 1/4 cup Honey** or Sugar
Ingredients (centers):
- 4 cup Whole Wheat Flour
- 3 TBSP. Baking Powder
- 2 tsp. Pumpkin Pie Spice
- 1 tsp. Cinnamon
- 4 Egg, large
- 4 cup Milk
- 1 cup Pumpkin, canned
- 1/2 cup Honey** or Sugar
Directions:
- Combine all dry ingredients in a bowl.
- Stir in egg and milk.
- Stir in pumpkin and honey until fully combined.
- Pour batter onto a pan or griddle sprayed with cooking spray.
- Cook on low-medium heat until sides start to bubble (~3 minutes).
- Flip pancakes and cook for an additional 1-2 minutes.
Serve:
1 pancake = 1/2 oz. eq. grain
**Substitute sugar instead of honey for children under 1 year of age.
