Ravioli Casserole

Ingredients (homes):
- 3 1/2 cup Spaghetti Sauce
- 1 (24 oz.) package Cheese Ravioli, frozen, enriched
- 1 pound Cottage Cheese
- 4 cup (1 pound) Mozzarella Cheese
- 1/4 cup Parmesan Cheese
Ingredients (centers):
- 2 qt. + 3/4 cup Spaghetti Sauce
- 3 pound 12 oz. Cheese Ravioli, frozen, enriched
- 2 1/2 pound Cottage Cheese
- 2 1/2 pound Mozzarella Cheese
- 2/3 cup Parmesan Cheese
Directions:
- Preheat oven to 350 degrees.
- Spread 1/3 of the spaghetti sauce in the pan(s).
- Layer with half of the ravioli, cottage cheese, and mozzarella. Top with 1/3 sauce.
- Repeat layers in step 3.
- Sprinkle with Parmesan.
- Bake covered with foil for 40 minutes.
- Uncover. Bake until a food thermometer reads 165F, about 30 minutes longer for a 9x13" pan.
- Cool 5-10 minutes.
Serve:
1 portion = 2 oz. meat alt., 1 oz. eq. grain + 1/4 cup vegetable.
Note: For ages 6+, add 1/4 cup vegetable to meet serving sizes at lunch/dinner.
