Refreshing Fruit Salad
Makes (homes):
about 7 cups fruit with juice

about 31 cups fruit with juice
Ingredients (homes):
- 2 pounds (32 oz.) berry medley, frozen
- 2 pounds (32 oz.) mixed fruit, frozen
- 1/4 cup lemon or lime juice
- 1/4 cup honey* or sugar
Ingredients (centers):
- 8 pounds 8 ounces berry medley, frozen
- 1 (136 oz). tub mixed fruit, frozen
- 1 cup + 1 Tablespoon lemon or lime juice
- 1 cup + 1 Tablespoon honey* or sugar
Directions:
- Mix frozen fruit, lemon/lime juice, and sweetener.*
- Place in the refrigerator overnight or until thawed. Serve.
- Tip: mash or puree for young children to prevent choking.
Serve:
1/4 cup fruit salad (with juice) counts as 1/4 cup fruit.
*DO NOT SERVE HONEY TO INFANTS. Honey may contain botulism spores, which can be harmful or fatal until the immune system matures around age 1.
