Slow Cooker Frittata with Zucchini and Feta

Ingredients (homes):
- 1 pound Zucchini, shredded
- 1/2 tsp., 1/4 tsp. Salt, divided
- 6 Eggs
- 1/4 tsp. Paprika
- 1/4 tsp. Thyme
- 1/4 tsp. Black Pepper
- 1 TBSP. Parsley
- 6 oz. Feta Cheese
Ingredients (centers):
- 2 pound Zucchini, shredded
- 1 tsp., 1/2 tsp. Salt, divided
- 12 Eggs
- 1/2 tsp. Paprika
- 1/2 tsp. Thyme
- 1/2 tsp. Black Pepper
- 2 TBSP. Parsley
- 12 oz. Feta Cheese
Directions:
- Salt zucchini in a colander. Drain 1 hour. Squeeze out liquid.
- Beat eggs and seasonings. Add zucchini and feta.
- Pour into slow cooker coated with nonstick spray.
- Cook on low for 3 hours or until a knife comes out clean.
Serve:
1 portion = 1 1/2 oz. meat alt. + 1/4 cup vegetable
