Tasty Taco Salad (WG)
Makes:
about 14 cups.
Ingredients:
- 1 large head lettuce
- 4 tomatoes
- 1 (8 ounce) package shredded cheddar cheese
- 1 (16 ounce) bottle French Catalina dressing
- 2 pounds lean ground beef
- 1 1/2 packets taco seasoning
- 1 (11 ounce) bag tortilla chips, whole grain-rich
Directions:
- Brown ground beef and drain.
- Add taco seasoning and water as directed on the package.
- Cut up lettuce and tomatoes.
- Place lettuce, tomatoes, and cheese in a large bowl.
- Cool meat mixture. Add to lettuce mixture.
- Mix in salad dressing.
- Serve with chips.
Serve:
2/3 cup (+ 1/2 ounce corn chips) to each 1-2 year old;
3/4 cup (+ 1/2 ounce corn chips) to each 3-5 year old;
1 1/3 cups (+ 1 ounce corn chips) to each 6-12 year old.
