Tater Tot Casserole

Ingredients (homes):

  • Ground Turkey (buy 1 lb. 8 oz. raw OR 1 lb. 1 oz cooked)
  • 1 (26 oz) can Cream Soup, any kind
  • 1 (12 oz) bag Mixed Vegetables, frozen
  • 8 oz. Cheddar Cheese (about 2 c. shredded)
  • 1 lb. 8 oz. Potato Rounds, frozen

Ingredients (centers):

  • Ground Turkey (buy 6 lb. raw OR 4 lb. 4 oz. cooked)
  • 2 (50 oz.) cans Cream Soup, any kind
  • 3 pounds Mixed Vegetables, frozen
  • 2 pounds Cheddar Cheese (about 8 c. shredded)
  • 6 pounds Potato Rounds, frozen

Directions:

  1. Spray pan(s) with nonstick spray.
  2. Place cooked ground turkey, soup, and veggies in the pan(s). Gently mix.
  3. Sprinkle cheese and potato rounds evenly on top.
  4. Bake at 375 degrees F until a food thermometer placed in the center reaches 165 degrees F, about 1 hour for a 9 x 13" pan.

Serve:

Serve each 1-2 year old 1/2 cup to count as 1 oz. eq. meat/alternate and 1/4 cup vegetable at lunch/dinner.
Serve each 3-5 year old 3/4 cup to count as 1.75 oz. eq. meat/alternate and 3/8 cup vegetable at lunch/dinner.
Serve each 6+ year old 1 cup to count as 2 oz. eq. meat/alternate and 1/2 cup vegetable at lunch/dinner.
