Tofu Scramble

Ingredients (homes):
- 2 tsp. Oil, Vegetable
- 1 cup Chopped Veggies, optional
- 16 oz. Tofu, firm, crumbled
- 1/2 tsp. Turmeric (for color)
- 1/4 tsp. Cumin
- 1/8 tsp. Salt
- Pepper, to taste, optional
Ingredients (centers):
- 2 TBSP. Oil, Vegetable
- 3 cup Chopped Veggies, optional
- 3 (16 oz.) Tofu, firm, crumbled
- 1 1/2 tsp. Turmeric (for color)
- 3/4 tsp. Cumin
- 3/8 tsp. Salt
- Pepper, to taste, optional
Directions:
- Heat oil. If desired, cook veggies in oil until soft.
- Add crumbled tofu and spices. Sauté until cooked throughout, about 2 minutes.
Serve:
1 Portion = 1 1/2 oz. meat alt.
